Mexican Roast

This is truly a keeper

1 large chuck roast or any other big cheap roast will do

1 small can tomato paste

1 package taco seasoning mix

1 regular jar salsa (I like medium on the spicy scale)

1 cup water

1 yellow onion sliced

Combine all ingredients except onion and roast. Put roast in crock pot and pour mixture over the top and place onions around it. Cover and cook on low for 8-10 hours. Remove and shred the beef and make burritos with it or enchiladas. YUMMY. This freezes so well too. I like to make a HUGE roast and then freeze up individual serving portions to microwave for fast dinners later. Enjoy!
